Green bean casserole

  1. Place beans in casserole. Prepare the “Holy Trinity” by sautéing a large sweet onion, a bunch of garden celery and about four to five sweet peppers. Add a packet of sliced portabella mushrooms. Add garlic and other herbs such as oregano. Add sautéed vegetables to the green beans. Then, prepare a while sauce. Once thickened, add about one half a cup a freshly grated parmesan cheese as well as salt and pepper and other seasonings if desired. Pour while sauce over vegetable mixture. Top with thinly sliced onions (batter fried or fresh) and seasoned bread crumbs. Bake covered at 350 degrees for thirty minutes, then uncover and bake another 15 minutes until brown on top.
    Serve with brown and wild rice.
